Description

A delightful dish featuring tender chicken in a rich, creamy peanut sauce with an aromatic garlic flavor and a crunchy garnish.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup creamy natural peanut butter
  • 1/2 cup full-fat coconut milk
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Instructions

  1. Prepare the chicken by cutting the breasts into bite-sized pieces and seasoning with salt and pepper.
  2. Cook the chicken in a large skillet with vegetable oil over medium-high heat until browned and cooked through (about 5-7 minutes). Remove and set aside.
  3. Sauté the minced garlic in the same skillet for about one minute until fragrant.
  4. Make the sauce by stirring in the soy sauce, peanut butter, and coconut milk until smooth.
  5. Combine the cooked chicken back into the skillet, stirring until well coated and letting it simmer until heated through.
  6. Serve the dish warm, garnished with chopped peanuts or fresh cilantro.

Notes

For added flavor, marinate the chicken in soy sauce for 30 minutes before cooking. Customize with veggies or spicy elements as desired.
