Ingredients

  • 1/4 cup breadcrumbs
  • 2 tablespoons green onions, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup creamy peanut butter
  • 1 tablespoon soy sauce (for sauce)
  • 1 tablespoon lime juice (for sauce)
  • 1 tablespoon honey
  • 1 teaspoon sriracha (optional)
  • 2 to 3 tablespoons warm water (for sauce)
  • 4 burger buns, toasted
  • 1 cup shredded carrot
  • 1 cup cucumber, thinly sliced
  • 1/2 cup fresh cilantro leaves (for garnish)
  • 1/2 red onion, thinly sliced

Instructions

  1. Combine the ground turkey, breadcrumbs, green onions, cilantro, garlic, ginger, soy sauce, lime juice, sesame oil, salt, and black pepper in a large mixing bowl.
  2. Form the mixture into four equal patties, making an indentation in the center of each.
  3. Heat the grill or skillet over medium-high heat, lightly oiling the surface.
  4. Cook the patties for 5-6 minutes on each side, reaching an internal temperature of 165°F.
  5. Whisk together peanut butter, soy sauce, lime juice, honey, and sriracha in a separate bowl, adding warm water to achieve a smooth consistency.
  6. Assemble the burgers with peanut sauce, turkey patty, carrots, cucumber, cilantro, and red onion on toasted buns.
  7. Serve warm, with extra peanut sauce on the side if desired.
