Deliciously smooth and creamy Coconut Lime Bars with a crunchy graham cracker crust, perfect for a tropical treat.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup coconut cream
- 1/4 cup fresh lime juice
- Zest of 1 lime
- 1/2 cup sweetened shredded coconut
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- Combine graham cracker crumbs, melted butter, and sugar in a medium bowl until resembling wet sand.
- Press the mixture firmly into the bottom of the prepared pan.
- Bake the crust for about 10 minutes until lightly golden.
- Whisk together sweetened condensed milk, coconut cream, lime juice, and lime zest in another bowl until smooth.
- Stir in the shredded coconut.
- Pour the filling over the baked crust and spread evenly.
- Bake for an additional 20-25 minutes until set with a slight jiggle in the center.
- Cool at room temperature, then refrigerate for at least two hours before cutting into bars.
- Serve chilled and enjoy!
Notes
These bars can be made a day in advance for better flavor, and can be frozen for up to three months.
