Description

Deliciously smooth and creamy Coconut Lime Bars with a crunchy graham cracker crust, perfect for a tropical treat.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup coconut cream
  • 1/4 cup fresh lime juice
  • Zest of 1 lime
  • 1/2 cup sweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Combine graham cracker crumbs, melted butter, and sugar in a medium bowl until resembling wet sand.
  3. Press the mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for about 10 minutes until lightly golden.
  5. Whisk together sweetened condensed milk, coconut cream, lime juice, and lime zest in another bowl until smooth.
  6. Stir in the shredded coconut.
  7. Pour the filling over the baked crust and spread evenly.
  8. Bake for an additional 20-25 minutes until set with a slight jiggle in the center.
  9. Cool at room temperature, then refrigerate for at least two hours before cutting into bars.
  10. Serve chilled and enjoy!

Notes

These bars can be made a day in advance for better flavor, and can be frozen for up to three months.
