Description

A delightful twist on a classic favorite, this Turkey and Spinach Veggie Lasagna layers tender noodles with savory turkey, vibrant greens, and rich cheeses for a wholesome family meal.


Ingredients

  • 9 lasagna noodles
  • 2 cups cooked turkey, shredded
  • 2 cups fresh spinach, chopped
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente.
  3. Combine the ricotta cheese, egg, Italian seasoning, salt, and pepper in a mixing bowl; beat until smooth.
  4. Spread a layer of marinara sauce on the bottom of a deep baking dish.
  5. Layer three cooked noodles over the sauce, then half of the ricotta mixture, half of the shredded turkey, and half of the chopped spinach. Top with some mozzarella cheese.
  6. Repeat these layers until all ingredients are used, finishing with noodles topped with marinara sauce and the remaining mozzarella and Parmesan cheese.
  7. Cover the dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 15 minutes or until bubbly and golden.
  9. Allow the lasagna to cool for about 10 minutes before slicing.
