Description

A comforting and customizable breakfast masterpiece with crispy potato skins and creamy, cheesy filling.


Ingredients

  • 4 large baking potatoes
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your preference)
  • 1/2 cup cooked and crumbled bacon or sausage (optional)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Butter (for mixing)
  • Olive oil (for drizzling)

Instructions

  1. Preheat the oven to 400°F (200°C) to prepare for the first bake.
  2. Bake the whole potatoes directly on the oven rack for about 45-60 minutes until fork-tender.
  3. Cut each potato in half lengthwise and scoop out the flesh into a mixing bowl.
  4. Mix the scooped potato flesh with eggs, cheese, bacon, green onions, salt, pepper, and butter until creamy.
  5. Fill the potato skins with the mixture, packing it in generously.
  6. Drizzle olive oil on top and return to the oven for another 20-25 minutes until crispy and golden brown.
  7. Serve warm and enjoy!

Notes

You can prepare the filling in advance and store it in the fridge until ready to fill the skins.
