- 4 large baking potatoes
- 4 large eggs
- 1 cup shredded cheese (cheddar or your preference)
- 1/2 cup cooked and crumbled bacon or sausage (optional)
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Butter (for mixing)
- Olive oil (for drizzling)
Instructions
- Preheat the oven to 400°F (200°C) to prepare for the first bake.
- Bake the whole potatoes directly on the oven rack for about 45-60 minutes until fork-tender.
- Cut each potato in half lengthwise and scoop out the flesh into a mixing bowl.
- Mix the scooped potato flesh with eggs, cheese, bacon, green onions, salt, pepper, and butter until creamy.
- Fill the potato skins with the mixture, packing it in generously.
- Drizzle olive oil on top and return to the oven for another 20-25 minutes until crispy and golden brown.
- Serve warm and enjoy!

You can prepare the filling in advance and store it in the fridge until ready to fill the skins.
