- 3 medium Roasted Beets, diced
- 2 Crisp Cucumbers, sliced
- 1 cup Salty Feta Cheese, crumbled
- 2 tablespoons Lemon Juice
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Dill, chopped
- Salt and Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wrap the beets in aluminum foil and place them on a baking sheet.
- Roast the beets for about 45 minutes or until fork-tender.
- Allow the beets to cool, then peel and chop them into bite-sized pieces.
- In a large mixing bowl, combine the roasted beets, sliced cucumbers, and crumbled feta cheese.
- In a smaller bowl, whisk together the lemon juice, olive oil, chopped dill, salt, and pepper.
- Pour the dressing over the salad mixture and toss gently to coat.
- Serve immediately or chill for 30 minutes to enhance flavors.

Make ahead by roasting the beets a day in advance. Serve chilled for the best flavor.
