Description

A colorful and refreshing beet salad with cucumbers, feta, and a lemon-dill dressing that elevates every bite.


Ingredients

Scale
  • 3 medium Roasted Beets, diced
  • 2 Crisp Cucumbers, sliced
  • 1 cup Salty Feta Cheese, crumbled
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Dill, chopped
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wrap the beets in aluminum foil and place them on a baking sheet.
  3. Roast the beets for about 45 minutes or until fork-tender.
  4. Allow the beets to cool, then peel and chop them into bite-sized pieces.
  5. In a large mixing bowl, combine the roasted beets, sliced cucumbers, and crumbled feta cheese.
  6. In a smaller bowl, whisk together the lemon juice, olive oil, chopped dill, salt, and pepper.
  7. Pour the dressing over the salad mixture and toss gently to coat.
  8. Serve immediately or chill for 30 minutes to enhance flavors.

Notes

Make ahead by roasting the beets a day in advance. Serve chilled for the best flavor.
